Post-harvest, the berries were destemmed without crushing, allowing for a gentle extraction process. A meticulous 14-day cold soak softened the skins and promoted ideal extraction of flavor and color. Fermentation was carried out in a combination of closed and open-top stainless steel fermenters, utilizing both punch-down and pump-over techniques to enhance the wine’s complexity and depth. The wine was then aged for up to 12 months in 100% French oak barrels, 60% of which were new, adding layers of sophistication and structure.
