A vinous journey begins with a meticulous maturation process lasting 16 months in French oak barriques, of which 40% are resplendently new. The result is a wine that not only captures the essence of its Napa Valley birthplace but also reflects the cyclical nature of viticulture on a global scale. In the dance between hemispheres, Bin 704 draws inspiration from its Australian stablemate, the mirror image, and kindred spirit, Bin 407.
The 2020 season in Napa Valley was a narrative of challenges and triumphs. A warm, dry winter set the stage, followed by a mild spring that paved the way for an early growing season. Summer brought its own unique character, with cool mornings and warm days. Despite the formidable obstacles posed by COVID restrictions and wildfires, our dedicated winemakers turned adversity into opportunity, yielding small batches of concentrated grapes that birthed a cabernet of unparalleled quality.
In the glass, the Boysenberry red hue heralds the adventure that awaits. The aromatic profile is a tantalizing medley of varietal precision and sweet indulgence. Cassis notes intertwine with satsuma plum paste, creating a charming olfactory tapestry. From the pasticceria, the fragrance of sfogliatella pastry, cinnamon scrolls, and bomboloni lingers, while hints of nutmeg, mace, and allspice hover above a tapestry of dried tobacco and sage.
